I LOVE the sweet, buttery flavor of cornbread, and since I’m also a huge fan of cookies, I decided to make these honey butter cornbread cookies. They’re SUPER tasty and soft with a bit of crunch. YUM!

Honey Butter Cornbread Cookies
Rich, buttery and sweet cornmeal cookies made in just 15 minutes; SUPER easy and perfect for breakfast, snacks or as a dessert.
I actually experimented with fine, medium-grind and coarse cornmeal. However, my favorite choice is medium-grind cornmeal because it adds a tiny crumbly touch to my cookies, which I love.
The course cornmeal makes them extra gritty, while the fine cornmeal makes them so soft.
Also, I highly recommend chilling the dough for 25-30 minutes, which improves the cookies' texture.
You'll Need

For the dry ingredients, I use cornmeal (medium-grind), all-purpose flour, baking powder, cornstarch and salt.
For the wet ingredients, I use unsalted butter (room temperature), honey, large eggs (room temperature), light brown sugar and vanilla extract.
Tip: Use high-quality honey for a better taste.
For coating, I use granulated sugar to roll the cookie dough in, which adds a delicious, crisp exterior to my cookies.

How To Make Them
Step 1: Preheat the oven to 350F / 180C, and line two large baking trays with parchment paper.
Step 2: Add the granulated sugar in a bowl and set aside.

Step 3: In a mixing bowl, mix all the dry ingredients: flour, baking powder, cornmeal, cornstarch, and salt, and set aside.

Step 4: In another mixing bowl, cream the butter and sugar using an electric mixer until soft and light.

Step 5: Add in honey, eggs and vanilla, and mix until combined.

Step 6: Mix in the dry ingredients until combined (DON’T OVERMIX). Chill the dough for 25-30 minutes.

Step 7: Use a large cookie scoop to scoop the cookie dough and then roll the dough between your hands.

Step 8: Roll the dough through the granulated sugar bowl and place it on the baking tray; repeat.

Step 9: Now, GENTLY press the cookies down with a cup to flatten them slightly (this step helps the cookies bake well in the oven).

Step 10: Bake for 10-15 minutes and allow to cool completely on the baking tray before serving.
Tip: DO NOT OVER BAKE THE COOKIES. You should have cookies with golden edges and a slightly soft centre and so soft, so keep them in the baking tray to cool and set.

Freeze The Cookie Dough
This cookie dough is super freezer-friendly. After preparing the cookies, instead of putting the baking tray in the oven to bake, put it in the freezer to solid, transfer the frozen cookies to a ziplock badge, and keep them in the freezer until needed.
I bake them frozen. However, I bake them at 350F / 180C for 15-17 minutes.
