Date cookies are an AMAZING treat for date lovers! They’re soft, buttery, sweet, a little spicy, and packed with dates. I lightly spiced them with cinnamon and nutmeg, then added walnuts for a lovely crunch.

For this recipe, I used pitted Deglet Nour dates because they hold their shape beautifully in the dough and add natural sweetness. I chop them up finely — it gives the cookies a much better texture and makes sure you get a chunk of date in every bite.
I decided to give my cookies a bit of a kick, so I added ground cinnamon and nutmeg. These warm spices pair perfectly with dates.
I also folded in some chopped walnuts for a bit of crunch.
You'll Need

Dry ingredients: I used all-purpose flour, caster sugar, baking soda, salt, ground cinnamon and nutmeg.
Wet ingredients: I used unsalted butter and eggs.
Add-ins: I added chopped pitted dates and chopped walnuts.

How To Make Date Cookies
Before we start, keep in mind that the dough needs to chill in the refrigerator for 30–40 minutes. Now, let’s break down the process.

Step 1: Cream butter and caster sugar together in a mixing bowl until light and fluffy.

Step 2: Mix in the eggs, one at a time, until combined.

Step 3: Mix in the sifted flour, baking soda, salt, cinnamon, and nutmeg until combined.

Step 4: Fold in the chopped dates and walnuts. You will have a sticky dough, which you need to refrigerate for 30-40 minutes.

Step 5: Now, preheat the oven to 180C / 350F. Line a baking sheet with parchment paper. Scoop tablespoons of the cookie batter onto the baking sheet.
Step 6: Bake for 10-12 minutes, until the edges are golden, then allow the cookies to cool, then serve.

Pro Tips
- For the best texture, don't overmix the cookie dough.
- Don’t use dry dates; they're too tough for baking. Pitted Deglet Nour dates are good choice for this recipe.
- Chilling the dough is so important; it improves the texture of the cookies and prevents them from getting too flat while baking.
- Make sure to distribute the chopped dates evenly throughout the cookie dough, so they don’t gather in one spot.
- Because dates are sweet, I use only one cup of sugar. You can even reduce it to ¾ cup and still get delicious cookies.
