Instructions
Cream butter and caster sugar together in a mixing bowl until light and fluffy.
Mix in the eggs, one at a time, until combined.
Mix in the sifted flour, baking soda, salt, cinnamon, and nutmeg until combined.
Fold in the chopped dates and walnuts. Then chill the dough for 30-40 minutes.
Now, preheat the oven to 180C / 350F. Line a baking sheet with parchment paper.
Scoop tablespoons of the cookie batter onto the baking sheet.
Bake for 10-12 minutes, then allow the cookies to cool, then serve.
Notes
Chilling the dough is so important; it improves the texture of the cookies and prevents them from getting too flat while baking.
