I absolutely love how these fried mashed potato patties are crispy on the outside and soft, tender and cheesy on the inside. YUM! I can't get enough of them.
If you have some leftover mashed potatoes in the fridge, turn them into these patties. They are easy to make and turn out amazing.

Fried Mashed Potato Patties
I usually don't have any leftover mashed potatoes in my house because my family loves them so much. However, since I have some mashed potatoes right now, I decided to turn them into crispy mashed potato patties.
I gave them another life by mixing them with cheddar cheese, eggs, and flour and then frying them until golden brown and crispy.
What I love most about these patties is that they are quick to make and do not need any fancy ingredients. Everything comes together in one bowl, and in just a few minutes, the leftovers in your fridge can turn into something so delicious.
These mashed potato cakes are perfect for lunch or as a side dish to Crispy Fried Chicken Strips or Baked Panko Chicken.
Top these potato cakes with a dollop of sour cream; you may also garnish with some chopped parsley or green onion.

You'll Need
This is an overview of the ingredients I used to make the recipe. The measurements are in the recipe card.
- Mashed potatoes: I prefer to use them cold. Believe me, it is so much easier to work with them when they are cold.
- All purpose flour: Flour is important; it gives the potato patties a thick texture. You may adjust the flour amount to your liking. For example, if your patty mixture turns out runny, add more flour, and vice versa.
- And if you don't like to use flour, you may substitute it for corn starch.
- Cheddar cheese: I like to use sharp cheddar cheese for a delicious flavour.
- Eggs: I use 3 large eggs to hold the patties mixture together.
- Vegetable oil: To fry the potato cakes.
How To Make Them

Step 1: In a large mixing bowl, add mashed potatoes, flour, eggs and cheese.

Step 2: Mix everything until combined.

Step 3: Heat the oil in a large skillet over medium-high heat. Scoop about ½ cup of the mixture into the hot oil and use a spatula to spread it out slightly and give it a round shape like pancakes.
(I like to make them not too thin or thick).

Step 4: Cook for 2-3 minutes, then flip to the other side and cook for another 3 minutes or until golden brown.
Step 5: Remove them from the oil and place them on paper towels. Transfer them to a serving plate and serve them warm.

Common Mashed Potato Patty Problems and Fixes
- The patties are too soft and fall apart: Add 1–2 tablespoons of flour to the mixture, or chill it for 30 minutes before frying.
- The patties are too dense: Mix in a small splash of milk to loosen the texture.
- The patty mixture is sticky: I highly recommend scooping the mixture directly into the pan instead of shaping it by hand. This makes the patties much easier to handle.
