Fried Mashed Potato Patties
Soft and crispy fried mashed potato patties made with leftover mashed potatoes and cheese. They are super easy to make and perfect as a side dish.

mashed potatoes

all purpose flour

cheddar cheese

vegetable oil
, to fry the patties
Instructions
In a large mixing bowl, mix mashed potatoes, flour, salt, black pepper, eggs and cheese until combined.
Heat the oil in a large skillet over medium-high heat.
Scoop about ½ cup of the mixture into the hot oil and use a spatula to spread it out slightly and give it a round shape like pancakes.
Cook for 2-3 minutes, then flip to the other side and cook for another 3 minutes or until golden brown.
Remove them from the oil and place them on paper towels. Transfer them to a serving plate and serve them warm.
Notes
If you don't like to use flour, you may substitute it for corn starch.
