Preheat the oven to 350F / 180C, and line two large baking trays with parchment paper.
Add the granulated sugar in a small bowl and set aside.
In a mixing bowl, mix all the dry ingredients: flour, baking powder, cornmeal, cornstarch, and salt, and set aside.
In another mixing bowl, cream the butter and sugar using an electric mixer until soft and light.
Add in honey, eggs and vanilla, and mix until combined.
Mix in the dry ingredients until combined.
Use a large cookie scoop to scoop the cookie dough. Roll the dough between your hands, then roll it through the granulated sugar bowl and place it on the baking tray; repeat.
Now, gently press the cookies down with a cup to flatten them slightly.
Bake for 10-15 minutes and allow to cool completely on the baking tray before serving.
Notes
The cookies come out of the oven soft, so keep them in the baking tray until cool completely to avoid breaking them.
