    Date Cookies

    Date cookies might sound like something your grandma would sneak into your lunchbox, but trust me — these cookies are AMAZING! They're soft, sweet, a little spicy, chewy, and they smell like caramel.

    For this recipe, I used pitted Medjool dates because they’re extra soft and naturally sweet. I like to chop them up finely — it gives the cookies a much better texture and makes sure you get little bursts of date goodness in every bite.

    I really like my cookies spiced, so I added ground cinnamon and nutmeg. These warm spices pair perfectly with dates. I used to add ground ginger as well, but I didn’t like the flavor it gave, so I stuck to just cinnamon and nutmeg.

    And because I can’t resist a little crunch, I also tossed in some chopped walnuts.

    Dry ingredients: I used all-purpose flour, caster sugar, baking soda, salt, ground cinnamon and nutmeg.

    Wet ingredients: I used unsalted butter and eggs.

    Add-ins: I added chopped pitted dates and chopped walnuts.

    How To Make Them

    Step 1: Cream butter and caster sugar together in a mixing bowl until light and fluffy.

    Mix in the eggs, one at a time.

    Mix in the sifted flour, baking soda, salt, cinnamon, and nutmeg.

    Add the chopped dates and walnuts to the batter.

    Pro Tips

    • For the best texture, don't overmix the cookie dough.
    • Don’t use dry dates; they're too tough for baking. I’ve found that pitted Medjool dates are the best choice for this recipe.
    • Chilling the dough is so important; it improves the texture of the cookies and prevents them from getting too flat while baking.
    • Make sure to distribute the chopped dates evenly throughout the cookie dough, so they don’t gather in one spot.
    • Because dates are sweet, I use only one cup of sugar. You can even reduce it to ¾ cup and still get delicious cookies.
