My date cookies are spicy, chewy and perfectly sweet! I enjoy them for breakfast, snack or dessert, and they are SUPER easy to make.

Date Cookies
Dates are my go-to snack! I also love incorporating them into my baked goods, such as these cookies, which turned out AMAZING.
In this recipe, I used pitted Medjool dates because they are so soft and sweet. I also like to chop them finely to give the cookies a better texture.
I spiced my cookies with ground cinnamon and nutmeg just to enhance the flavour, and also, these spices go SOO well with dates.
I also added chopped walnuts (my favourite nuts) to add lovely crunchiness to these cookies.

Here is an overview of all the ingredients I used to make this dessert. The quantities are in the recipe card.
Dry ingredients: I used all-purpose flour, caster sugar, baking soda, salt, ground cinnamon and nutmeg.
Wet ingredients: I used unsalted butter and eggs.
Add-ins: I added chopped pitted dates and chopped walnuts.
How To Make Them

Step 1: Cream butter and caster sugar together in a mixing bowl until light and fluffy.

Step 2: Mix in the eggs, one at a time, until combined.

Step 3: Mix in the sifted flour, baking soda, salt, cinnamon, and nutmeg until combined.

Step 4: Fold in the chopped dates and walnuts. You will have a sticky dough, which you need to refrigerate for 30-40 minutes.
Tip: Chilling the dough is so important; it improves the texture of the cookies and prevents them from getting too flat while baking.

Step 5: Now, preheat the oven to 180C / 350F. Line a baking sheet with parchment paper. Scoop tablespoons of the cookie batter onto the baking sheet.
Step 6: Bake for 10-12 minutes, then allow the cookies to cool, then serve.

- 3 cups all-purpose flour
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon salt

- 1 ½ cups pitted dates , chopped
- 1 cup walnuts , chopped
Instructions
