Inspired by my Cloud Cake Recipe, I made these cloud cookies. They are INCREDIBLY light and fluffy and loaded with chocolate chips. YUM!

    Cloud Cookies

To achieve the light and airy texture, you must thoroughly sift the dry ingredients and cream the butter until light and fluffy (I prefer to add the sugar gradually while creaming the butter).

Both steps will ensure you achieve the best texture ever. Also, this easy recipe doesn't need any chilling time.

    You'll Need

    cloud cookies ingredients.

Here is an overview of all the ingredients I used to make these fluffy cookies. The quantities are in the recipe card.

For the dry ingredients, I use all-purpose flour, baking soda and salt.

For the wet ingredients, I use room-temperature butter and eggs, vanilla extract, caster sugar and light brown sugar.

Add-ins: I simply added milk chocolate chips.

Tip: Use room temperature egg and butter for better results.

    How To Make Them

Step 1: Preheat the oven to 180C / 350F and line a large baking tray with parchment paper.

In a bowl, sift flour, baking soda and salt.

Step 2: In a bowl, sift flour, baking soda and salt, and set aside.

Beat the butter with an electric mixer until it is fluffy and smooth.

Step 3: In a mixing bowl, add the butter and beat with an electric mixer until it is fluffy and smooth.

    Add the sugar gradually.

Step 4: Start adding the caster and brown sugar GRADUALLY while beating the mixture.

Add the egg and vanilla extract.

Step 5: Add the egg and vanilla extract and beat again until combined.

    Stir in the dry ingredients.

Step 6: Stir in the dry ingredients until incorporated (DON’T OVERMIX THE DOUGH for a better texture).

    Fold in the chocolate chips.

Step 7: Fold in the chocolate chips.

Scoop tablespoons of the cookie dough.

Step 8: Scoop tablespoons of the cookie dough (I use cookie scoop).

Put the cookies onto the prepared baking tray, leaving enough space between them.

Step 9: Place the cookies onto the prepared baking tray, leaving enough space between them to expand (I add 6 cookies per baking tray).

Step 10: Bake the cookies for 10 minutes. Remove from oven and let them cool before serving.

Tip: These cookies come out of the oven so delicate; allow them to cool on the baking tray for 4-5 minutes before transferring to a wire rack.
