Preheat the oven to 180C / 350F and line a large baking tray with parchment paper.
In a bowl, sift flour, baking soda and salt, and set aside.
In a mixing bowl, add the butter and beat with an electric mixer until it is fluffy and smooth.
Start adding the caster and brown sugar gradually while beating the mixture.
Add the egg and vanilla extract and beat again until combined.
Stir in the dry ingredients until incorporated (don’tovermix the dough for a better texture).
Fold in the chocolate chips.
Scoop tablespoons of the cookie dough and place them onto the prepared baking tray, leaving enough space between them to expand (I add 6 cookies per baking tray).
Bake the cookies for 10 minutes. Remove from oven and let them cool before serving.
Notes
These cookies come out of the oven so delicate; allow them to cool on the baking tray for 4-5 minutes before transferring to a wire rack.
