I've just made THE BEST lemon white chocolate cookies ever! They are crunchy, lemony and easy to put together.

    Lemon White Chocolate Cookies

SUPER delicious and easy sweet and tangy cookies! I serve them as snacks with afternoon tea, or desserts and sometimes even as breakfast! My kids love them so much, especially with a cup of milk.

This easy cookie recipe doesn’t require any dough chilling; it bakes perfectly without it.

The key to the best homemade lemon cookies is using fresh lemon juice and zest! It really makes all the difference in achieving the best flavor ever!

    You'll Need

    lemon white chocolate cookies ingredients.

Here is an overview of all the ingredients I used to make this recipe. The quantities are in the recipe card.

For wet ingredients, I used unsalted butter, large eggs (at room temperature), vanilla extract, and fresh lemon juice.

Tip: I don't like to use bottled lemon juice because it doesn't taste as tasty as fresh lemon juice.

For dry ingredients, I used light brown sugar, granulated sugar, all-purpose flour, baking soda, salt, lemon zest and white chocolate chips.

Tip: I highly recommend using good quality chocolate chips for better taste.

    How To Make Them

Step 1: Preheat the oven to 180C / 350F and line a baking tray with parchment paper.

In a mixing bowl, whisk both sugar and melted butter.

Step 2: In a mixing bowl, whisk both sugar and melted butter.

Whisk in lemon juice and zest, eggs and vanilla extract.

Step 3: Whisk in lemon juice and zest, eggs and vanilla extract until combined.

Stir in flour, baking soda and salt, then fold in the white chocolate.

Step 4: Stir in flour, baking soda and salt, then fold in the white chocolate.

use a cookie scoop to scoop the dough out and roll it into balls.

Step 5: Now, use a cookie scoop to scoop the dough out and roll it into balls.

Tip: I like using a cookie scoop to ensure all my cookies are the same size, which helps them bake evenly. If you don't have a cookie scoop, use a large measuring spoon.

Place the cookies on the baking tray and slightly flatten them with your hand.

Step 6: Place the cookies on the baking tray and slightly flatten them with your hand.

Seven: Bake for 10 minutes, then allow to cool COMPLETELY before serving.
