I ordered Tuscan butter salmon from a restaurant 2 days ago, and I didn't like it AT ALL, so I decided to make it at home. And that I did, my friends.
Golden, pan-seared salmon cooked in a creamy Tuscan sauce loaded with Parmesan cheese, garlic and heavy cream. YUM!
Creamy Tuscan Salmon
I LOVE Tuscan-style salmon recipes, and this garlic butter salmon dish is my family's favorite!
This recipe is a super quick and easy one-pan recipe that is ready in just 20 minutes.
The key to the best texture is to pat the fillets dry before cooking to ensure they sear nicely and develop a golden crust. Also, cooking the salmon in a hot pan makes it crispy outside.
For rich flavor, I use heavy cream and freshly grated parmesan cheese, and I also add fresh basil for extra flavor.
My family like it soo much especially when I serve it with mashed potatoes, Pan Fried Green Beans or Chimichurri Rice.
You'll Need
Salmon fillets: I prefer to use fresh salmon for better flavor and texture. If you like to use frozen salmon, make sure to thaw it before using it.
Olive oil: To pan sear the salmon
Salt and black pepper: To season the salmon fillets.
Butter: I use unsalted butter to saute the garlic and tomatoes before adding the cream.
Garlic: It adds flavor.
Cherry tomatoes: I cut them into halves.
Baby spinach: I use fresh.
Heavy cream and Parmesan cheese: To make a rich Tuscan sauce.
Fresh basil: It adds extra flavor.

How To Make Tuscan Salmon
Step 1: Pat the salmon dry with a kitchen towel, then season them with salt and black pepper.
Step 2: Heat the oil in a large frying pan over medium-high heat, add the salmon (skin side up), cook for 3-4 minutes until golden brown, flip it on the other side, and cook for 2-3 minutes more. Transfer them to a plate (DON'T OVERCOOK).
Step 3: In the same pan, add butter to melt, add the garlic and tomatoes and cook for 1-2 minutes.
Step 4: Add the spinach and cook for 2-3 more minutes or until wilted.
Step 5: Stir in Parmesan cheese, heavy cream, and fresh basil, then simmer for 4-5 minutes.
Step 6: Add the salmon bake to the pan, cover it with the sauce and simmer for 2 to 3 minutes. Garnish with chopped basil and serve.
Tip: Salmon cooks quickly, so watch it closely and don't overcook it. Cook until it flakes easily with a fork.

- 2 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 tablespoon unsalted butter
- 3 cloves garlic , minced
- 1 cup cherry tomatoes , cut into halves
- 2 cups baby spinach
- ¼ cup Parmesan cheese , grated
- ½ cup heavy cream
- ¼ cup fresh basil , chopped
Instructions
- Pat the salmon dry with a kitchen towel, then season them with salt and black pepper.
