I enjoy jam for breakfast, and I have so much jam in the fridge! So, I used some of it to make these jam filled cookies.
They are more like shortbread cookies with jam in the middle, and I ADORE them. Seriously, I can't get enough of them!
I can't resist the sweet buttery taste of these cookies with jam.
I've made SO many cookie recipes, but these cookies with jam are absolutely my favourite.
They are stable in my house! I really like the lovely combination of buttery dough and sweet jam; it is so delicious! I also love how rich these cookies are.
The recipe is super simple and doesn't need any chilling! It is also incredibly easy and calls for just 5 ingredients.
Jam
I really didn't know which jam flavor would be best for these cookies. However, I used strawberry jam as I love it the most, but you can also use your favorite jam flavor.
I highly recommend using a thick, high quality jam to prevent it from spilling while baking.
The Cookie Dough
To make the cookie dough, I used only 4 ingredients: unsalted butter (softened), white sugar, egg yolks and all-purpose flour. That's all I used.
I like to use a small cookie scoop to scoop the cookie batter, ensuring all the cookies are the same size. This not only makes them look beautiful but also allows them to cook evenly.
How To Make The Recipe
One: Preheat the oven to 190C / 360F and line a baking tray with parchment paper.
Two: In a mixing bowl, mix sugar, butter, and egg yolks with the electric mixer until they are combined.
Three: Mix in the flour gradually until a smooth, soft dough forms.
Scoop about 1 tablespoon of the dough, roll it between your hands and place it in a baking tray; repeat making balls.
Tip: Place the balls in the tray 2-3 inches apart.
Four: Now, press your thumb in the middle of each ball to make a well.
Five: Now, fill each well with about ¼ teaspoon of the strawberry jam.
Tip: Don't overfill the cookies with jam to prevent the jam from spilling out. ¼ teaspoon of jam is the perfect amount for each cookie.
Six: Bake in the oven for 8-10 minutes, then allow to cool before serving.
Tip: To know if the cookies are done baking, they should be lightly golden around the edges.
Tip: The cookies come out of the oven soft, so let them cool for a few minutes before moving them.
