I am in love with these lovely, light and airy Easter mini eggs donuts; they are a super festive and absolutely delicious dessert.
I also like that they are baked donuts, which are healthier for me than fried ones.
This recipe is also so simple; all you have to do is mix the ingredients in one bowl, then scoop the batter into a donut tin and let the oven do its magic. The best part is they take just 10 minutes in the oven to be ready!
Kids can help make these donuts for a fun Easter activity; actually, my daughter helped me decorate these donuts, which were SO fun.

Cadbury Mini Eggs: They give the donuts a festive appeal. You may use Ferrero Mini Eggs or Terry’s chocolate orange mini eggs instead.
How To Crush The Mini Eggs
Use a pestle and mortar to crush the mini eggs; place one egg at a time into the bowl and pound lightly. This method ensures that you do not end up with ground mini eggs. Ensure that you break the eggs into chunks and not tiny fine pieces.
Another way to crush mini eggs is to put them in a ziplock bag and use the rolling pin to crush them.
How To Make Easter Donuts With Mini Eggs - Step by Step
One: Preheat oven to 350F / 180C and grease a donut pan with butter or spray with cooking spray.
Two: In a large bowl, mix together eggs, sugar, vanilla extract, butter and vegetable oil.
Three: Whisk in sour cream and milk until combined.
Four: Whisk in flour, baking powder and baking soda until incorporated.
Tip: Ensure that you sift the dry ingredients. This step helps to create a light texture, eliminate clumps and distribute the ingredients evenly.
Five: Fold in the crushed Cadbury mini eggs.
Six: Spoon the batter into the donut pan and bake for 10 minutes or until the bottom of the donuts are golden brown then transfer to a wire rack to cool.
Tip: Don’t overfill the donut pan with the batter, you can use a piping bag to put the batter into the baking pan neatly.
Seven - Make The Glaze: Whisk together the milk and confectioner's sugar until smooth.
Tip: Ensure that the glaze is thin but not watery. If the glaze is too thick, add milk at room temperature to thin it out a little bit.
Eight: Drizzle the glaze over the donuts, place the glazed donut onto a wire rack and top with some of the crushed mini eggs. Let the glaze firm for 10-15 minutes, then serve.
Top Tips!
- Lightly shake off the excess glaze from the donut. Also, allow the glaze to firm up before serving.
- To avoid overmixing the batter when preparing this recipe. Overbeating the batter could make the donuts tough and chewy.
