    Super fluffy baked donuts! My Easter donuts are incredibly easy, glazed with a delicious sugar glaze and decorated with Cadbury mini eggs. YUM!

    Easter Donuts With Mini Eggs

    I am in love with these lovely, light and airy Easter mini eggs donuts; they are a super festive and absolutely delicious dessert.

    I also like that they are baked donuts, which are healthier for me than fried ones.

    This recipe is also so simple; all you have to do is mix the ingredients in one bowl, then scoop the batter into a donut tin and let the oven do its magic. The best part is they take just 10 minutes in the oven to be ready!

    Kids can help make these donuts for a fun Easter activity; actually, my daughter helped me decorate these donuts, which were SO fun.

    What’s In This Recipe?

    All-purpose flour: Use the correct amount of flour to ensure that your donuts are light and soft. Using too much flour can make the donuts dry and dense.

    Baking powder & baking soda: They are leavening agents that help raise the dough and make the donuts light and airy.

    Granulated sugar: To sweeten these donuts, I use granulated sugar.

    Milk: I use full-fat milk in making both the donut and the glaze.

    Sour cream: It keeps the donuts moist while enhancing texture and richness. You may use buttermilk instead.

    Eggs: I use 2 large eggs.

    Butter: It gives the donuts a soft and rich texture. I use unsalted butter. Butter is also used to grease the donut pan.

    Vegetable oil: It helps to mix ingredients and form the dough.

    Vanilla extract: It enhances the flavor.

    Cadbury Mini Eggs: They give the donuts a festive appeal. You may use Ferrero Mini Eggs or Terry’s chocolate orange mini eggs instead.

    How To Crush The Mini Eggs

    Use a pestle and mortar to crush the mini eggs; place one egg at a time into the bowl and pound lightly. This method ensures that you do not end up with ground mini eggs. Ensure that you break the eggs into chunks and not tiny fine pieces.

    Another way to crush mini eggs is to put them in a ziplock bag and use the rolling pin to crush them.

    How To Make Easter Donuts With Mini Eggs - Step by Step

    One: Preheat oven to 350F / 180C and grease a donut pan with butter or spray with cooking spray.

    Mix eggs, sugar, vanilla extract, butter and oil. Add in milk and sour cream.

    Two: In a large bowl, mix together eggs, sugar, vanilla extract, butter and vegetable oil.

    Three: Whisk in sour cream and milk until combined.

    Add in flour, baking powder and baking soda. Fold in crushed Cadbury mini eggs.

    Four: Whisk in flour, baking powder and baking soda until incorporated.

    Tip: Ensure that you sift the dry ingredients. This step helps to create a light texture, eliminate clumps and distribute the ingredients evenly.

    Five: Fold in the crushed Cadbury mini eggs.

    Spoon the batter into the donut pan and bake.

    Six: Spoon the batter into the donut pan and bake for 10 minutes or until the bottom of the donuts are golden brown then transfer to a wire rack to cool.

    Tip: Don’t overfill the donut pan with the batter, you can use a piping bag to put the batter into the baking pan neatly.

    Seven - Make The Glaze: Whisk together the milk and confectioner's sugar until smooth.

    Tip: Ensure that the glaze is thin but not watery. If the glaze is too thick, add milk at room temperature to thin it out a little bit.

    Eight: Drizzle the glaze over the donuts, place the glazed donut onto a wire rack and top with some of the crushed mini eggs. Let the glaze firm for 10-15 minutes, then serve.

    Top Tips!

    • Lightly shake off the excess glaze from the donut. Also, allow the glaze to firm up before serving.
    • To avoid overmixing the batter when preparing this recipe. Overbeating the batter could make the donuts tough and chewy.

    Recipe Variations

    • Top your donuts with buttercream frosting, cream cheese frosting or just sprinkle with some powdered sugar.
    • Make these donuts with chocolate flavor by replacing ¼ cup of flour with cocoa powder.

    Storage

    To Store: I store the glazed donuts in an airtight container for up to 3 days in the fridge.

    To Freeze: Easter donuts can be frozen before decoration. Place baking paper between the donuts before freezing them.

    Ingredients

    • ¾ cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • ¼ cup butter
    • ¼ cup vegetable oil
    • ½ cup milk
    • ½ cup sour cream
    • 2 ⅓ cup all purpose flour
    • 1 ½ teaspoon baking powder
    • ½ teaspoon baking soda
    • pinch of salt
    • 1 Cadbury mini eggs , crushed

    For the Glaze

    • 1 cup confectioner's sugar
    • 2 tablespoon milk
    • ⅓ Cadbury mini eggs , crushed

    Instructions
