Cinnamon Cookies
I really enjoyed these delicious cookies! They are buttery and perfectly spiced with cinnamon and nutmeg. The recipe is also so easy and quick to follow. However, it requires a chilling time. I know some people don't like to wait but believe me, the result is worth waiting for.

How To Make Them
Let's break down the process.

Two: Mix in the egg and vanilla extract.

Three: Fold in the flour, salt, cinnamon and nutmeg.
Tip: I highly recommend sifting all the dry ingredients before using them to ensure there are no lumps in the batter.

Four: Now, wrap the bowl with a plastic wrap and chill for 1-2 hours.
Five: Before baking, preheat the oven to 180C / 350F and line a baking sheet with parchment paper.
![Scoop about 1 tablespoon of the dough per cookie and then put balls on the baking sheet.](https://recipetale.com/wp-content/uploads/2024/06/cinnamon-spice-cookies-7.jpg)
Six: Scoop about 1 tablespoon of the dough per cookie and then put balls on the baking sheet, allowing 1-2 inches between them.
Tip: I used the large cookie scoop to make the balls, and the recipe yielded 12 large cookies.
Seven: Bake for 10-11 minutes, then allow to cook for 5 minutes before serving.
Tip: The cookies come out of the oven soft; they will harden as they cool.

Why Chill The Dough
It is really important to chill the dough if you want chewy, thick cookies, as the chilled cookies will only spread a little in the oven. I also find it easier to roll out and cut a chilled dough.
More Spices To Add
If you like ground nutmeg or cloves, you can add ⅛ teaspoon of each to the cookie dough.
