Candied Carrots—what I like to call 'Carrot Candy' is a simple and easy side dish that is buttery and glazed with brown sugar. I also added a hint of warm spices. YUM!

I never thought I could turn a simple vegetable into a dessert, but these glazed carrots were AMAZING!
This dish is super easy to make; it calls for 4 ingredients and is ready in just 15 minutes. All you need to do is sauté the carrots into a mix of butter and brown sugar until golden and caramelized.
These glazed carrots are perfect as a dessert for Thanksgiving or a Holiday side dish.
I like to serve it as a side dish with Pepper Steak, Devilled Chicken or Crispy Fried Chicken Strips. I also slice it into small strips and use it as a cake, muffin and pie decoration.
You'll Need

Carrots: I wash, peel the carrots and cut them into 2-inch pieces. You may use whole baby carrots if you want.
Brown sugar: I add 3 tablespoons of brown sugar for 1 lb of carrots for a good glaze and caramelization. However, if this amount is too sweet for your taste, just use 2 tablespoon.
Butter: I use unsalted butter.
Salt: To taste.
Ground cinnamon and nutmeg: Optional, to flavor.

How To Make Carrot Candy

Step 1: Peel the carrots and cut them into 2-inch pieces.

Step 2: In a large pan, add the carrot pieces and 1 cup of water over medium heat. Bring to a simmer and cook the carrots for 9-10 minutes or until softened.

Step 3: Pierce one of the carrot pieces with a fork. If it is tender through the centre, then it is done.
Drain the carrot from the water.
Tip: Don't overcook the carrots, or they will turn out mushy as they will cook again in the glaze.

Step 4: Put the pan on the stove, and add brown sugar, butter, carrot, salt, cinnamon and nutmeg. Cook over medium heat for 2-3 minutes, and make sure that carrots are coated in the glaze.
Tip: I keep leftovers in an airtight container in the refrigerator for up to 5 days.
