    Thai Curry Pizza

    I have wanted to make Thai curry pizza for a while. I made a smoked salmon pizza recipe a week ago and loved it, so I thought a curry pizza would also be delicious. And yes, I am SO glad I made it.

    Thai Curry Pizza

    This pizza recipe is exactly what it sounds like, a cross-over between Thai Curry and Italian Pizza.

    First, I infuse the Thai curry with rich coconut milk, spread it on top of fresh pizza dough, and then top it with crispy vegetables and stringy mozzarella cheese. It is a delicious choice for pizza night.

    Red Thai curry paste: If you're not a fan of red Thai curry, I suggest using green Thai curry! Let us know how it goes in the comment section below.

    Coconut milk: I mix the red Thai curry paste with a small amount of coconut milk to spread easily on the pizza dough.

    Brown sugar: I add a tiny amount to bring out extra flavour in the curry.

    Pizza Dough: I used store-bought pizza dough.

    Vegetables: I use green and yellow bell peppers and red onions.

    Cheese: I use shredded Mozzarella cheese.

    Thai basil: I like to garnish this pizza with fresh Thai basil. However, you can use cilantro, parsley or spring onion instead.

    Step By Step Instructions

    Let's break down the process.

    One: Preheat the oven to 180C / 350F and start preparing!

    In a small bowl, mix the red curry paste, coconut milk and brown sugar.

    Two, Prepare the Thai Curry Sauce: Take a small bowl, and add in it the red curry paste, coconut milk and brown sugar. Then whip all the ingredients together until it is a smooth mixture. The Thai Curry sauce is ready.

    Roll out the pizza dough and place it in a round baking pan.

    Three, Assembling the Pizza: Roll out the pizza dough and place it in a round baking pan.

    Spread the Thai Curry sauce we've just prepared generously on top of the pizza dough.

    Spread the chopped onion, bell pepper, and mushroom evenly on the pizza.

    Finish the toppings with plenty of shredded Mozzarella cheese.

    Seven: Place this pizza in the oven. Let it bake for about 10 to 15 minutes or until the edges of the crust are lightly browned, and the cheese has melted.

    Eight: Once out of the oven, garnish your pizza with fresh chopped Thai basil and serve.

    Ta-duh! Your Cross-over pizza is ready! Was simple enough to make, was it?

    Expert Tips!

    Thai curry paste can be spicy for some people. So, I suggest to use one teaspoon, taste, and only then add more.

    A preheated oven is a must! When you place your pizza in an oven that's already hot, the crust will puff up, which is what you want. Not to mention that the vegetables will also come out better cooked.

    For protein, vegetarians can top their pizza's with tofu.

    For vegetables, you can definitely opt for favourite ones, that might not be mentioned in this recipe, such as butternut squashes or broccoli.

    The Best Way To Store And Reheat Leftovers

    I wrap leftovers in an airtight container and keep them in the fridge for no longer than 3 to 4 days. 

    To reheat them, I place the pizza in the oven for 6-8 minutes at approximately 350 F / 180 C. You can also reheat the pizza in an air fryer for 3 to 5 minutes at the same temperature.

    Ingredients

    • 2 tablespoon coconut milk
    • 1 tablespoon red Thai curry paste
    • 1 teaspoon brown sugar
    • 1 pizza dough , store bought
    • 1 yellow bell pepper , chopped
    • 1 green bell pepper , chopped
    • 1 red onion , thinly sliced
    • 1 cup mozzarella , shredded
    • ½ cup mushrooms , sliced
    • 2 tablespoon Thai basil , chopped

    Instructions

    • Preheat the oven to 180C / 350F.
