Preheat the oven to 220c / 430f and line a baking sheet with parchment paper.
In a large mixing bowl, mix together cheddar cheese, spring onions, breadcrumbs, heavy cream, black pepper and paprika.
2 cups mature cheddar cheese, 6 spring onions, 2 tablespoon heavy cream, 1 cup Panko breadcrumbs, ½ teaspoon paprika, ½ teaspoon black pepper
Roll out the pastry sheet and cut it lengthways into two rectangles.

Divide the mixture into two, spread the mixture in a long strip lengthwise of each piece of pastry.
Brush the top edge of the pastry with egg ( all along the length).

Now, roll the pastry up with the mixture in the middle (make sure it's quite tight). Repeat with the other length of pastry.
Now brush the rolls with egg. Cut each roll into 10 pieces.
Place the rolls onto a large baking tray (keep free space around each roll).
Bake for 12-15 minutes until golden brown.
Notes
Make sure to roll out the pastry on a well-floured surface or parchment paper. If your rolls get stuck to the counter and ruined when pulled, all your efforts will go in vain.
