Preheat the oven to 150C / 300F and line a large baking sheet with parchment paper.
In a saucepan, melt both butter and honey over low heat, stirring frequently with a wooden spoon until mixed.
Stir in the nuts and cayenne pepper (make sure the nuts are evenly coated).
Now, spread the nuts onto the baking sheet in a single layer.
Bake in the oven for about 20 minutes until the nuts are golden brown.
Remove from the oven and sprinkle with salt and brown sugar.
Let the nuts cool down for 1-2 hours, then transfer them to an airtight container.
Notes
I use raw, unsalted almonds, walnuts, pistachios and cashews. You can opt to buy mixed nuts that are pre-packaged together, or you can buy them separately to create your potpourri of honeyed nuts.
