Instructions
Preheat oven to 350 F / 180 C and line 2 large cookie sheets with parchment paper.
Cream the butter and sugar in the stand mixer or with the electric mixer until light and fluffy.
Add the egg, buttermilk, and vanilla extract and mix until combined.
Sift the flour over the mixture, add the salt and baking soda, and mix until combined.
Fold in the chocolate chips.
Scoop the cookie batter using a cookie scoop into the baking sheets, leaving space between them.
Bake for 10-12 minutes, then let them cool completely before serving.
Notes
The cookies come out of the oven so soft, so don't touch them for 10 minutes, then transfer them to a cooling rack to cool completely.
